- Hi… I am a new baker and was wondering if SMBC would hold up in humid weather. I have a 2 layer cake coming up. I find the American Buttercream too sweet and would like to try this or IMBC. The cake will be in the shade but I am from a place that is practically humid all year round…. hmmm. Thanks so much and more power.I am just so glad my friend referred me to your site.
